Quan la gent ens parla de la qu\u00edmica a la cuina tothom es pensa que fa refer\u00e8ncia als canvis d\u2019estats de les subst\u00e0ncies, per\u00f2 no es tracta \u00fanicament d\u2019aix\u00f2. La hipot\u00e8si del meu treball s\u00f3n saber quins tipus d\u2019esferificacions hi ha i com es produeixen, per acabar intento posar-me a la pell d\u2019un cuiner per\u00f2 en un laboratori, per tal d\u2019obtenir la millor esferificaci\u00f3 directa i inversa.<\/p>\n<h6><strong>El proc\u00e9s:<\/strong><\/h6>\n<p style=\"text-align: justify;\">La part te\u00f2rica la vaig redactar alhora que la pr\u00e0ctica, ja que mentre feia la pr\u00e0ctica tenia molt de temps lliure.<br \/>\nPer a la recerca d\u2019informaci\u00f3 de la part te\u00f2rica vaig consultar diverses p\u00e0gines web i vaig demanar llibres dels temes que tracto a la biblioteca de la universitat. Al ser un tema bastant innovador vaig trobar pocs llibres, per\u00f2 em van donar molta informaci\u00f3 per aplicar al meu treball.<br \/>\nLa part pr\u00e0ctica, com ja he esmentat pr\u00e8viament, la vaig realitzar en els laboratoris de la Universitat Rovira i Virgili, durant tot el mes de juny i durant mig mes de juliol. Sempre estava amb la Maria Teresa Codera , una senyora que m\u2019ajudava en el laboratori a fer les pr\u00e0ctiques i a qui li demanava el material necessari per realitzar-les. A m\u00e9s els estudiants del doctorat m\u2019ajudaven sempre que podien. Tamb\u00e9 tenia l\u2019ajuda de la Marta Calull per la part te\u00f2rica, que era la coordinadora de la meva estada.<br \/>\nLa dificultat que vaig tindre, va ser alhora d\u2019escollir el tema del meu treball de recerca, perqu\u00e8 estava interessat en varis. Per\u00f2 al proposa\u2019m la universitat aquest tema em va semblar molt interessant.<\/p>\n<h6><strong>Conclusions:<\/strong><\/h6>\n<p style=\"text-align: justify;\">En el treball he aconseguit assolir tots els objectius que m\u2019havia proposat:<br \/>\n\u2022 Gr\u00e0cies aquest treball he pogut saber com es va aprofundir la relaci\u00f3 entre la qu\u00edmica i la cuina. A m\u00e9s, he conegut la vida de Ferran Adri\u00e0, Pere Castells i el treball dut a terme per la Fundaci\u00f3 Al\u00edcia.<br \/>\n\u2022 Tamb\u00e9 en aquest treball he apr\u00e8s que \u00e9s una esferificaci\u00f3, els seus tipus i com es produeix una esferificaci\u00f3 directa i una inversa.<br \/>\n\u2022 He aconseguit d\u2019una manera fiable la millor esferificaci\u00f3 directe i inversa. He fet diverses esferificacions variant diferents par\u00e0metres i les he deixat provar a 20 persones. En els resultats obtinguts he concl\u00f2s quin par\u00e0metre era el millor, per tal d\u2019arribar a la millor esferificiaci\u00f3.<br \/>\n\u2022 Tamb\u00e9 he pogut descobrir com \u00e9s el fet d\u2019estar al laboratori d\u2019una facultat i la manera de treballar-hi: l\u2019organitzaci\u00f3 de la gent, la varietat d\u2019aparells i eines que s\u2019hi utilitzen, etc.<br \/>\nHa estat una experi\u00e8ncia molt bona, ja que he descobert que el m\u00f3n de la qu\u00edmica \u00e9s el que realment m\u2019agrada.
