{"id":13244,"date":"2019-03-23T20:09:51","date_gmt":"2019-03-23T19:09:51","guid":{"rendered":"http:\/\/serveiseducatius.xtec.cat\/tarragones\/?p=13244"},"modified":"2019-04-28T07:38:42","modified_gmt":"2019-04-28T05:38:42","slug":"trics13_jjimenez","status":"publish","type":"post","link":"https:\/\/serveiseducatius.xtec.cat\/tarragones\/dinamitzacio\/trics\/trics13_jjimenez\/","title":{"rendered":"Recompte de microorganismes"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-5353\" title=\"Juan Manuel Jim\u00e9nez Aguilar\" src=\"https:\/\/serveiseducatius.xtec.cat\/tarragones\/wp-content\/uploads\/usu549\/2019\/03\/trics13_jjimenez.jpg\" alt=\"Juan Manuel Jim\u00e9nez Aguilar\" width=\"150\" height=\"200\" \/><strong><span style=\"color: #808080;\"><em>T\u00edtol:\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/em><\/span><\/strong><strong>M\u00e8todes de recompte de microorganismes aplicats a la producci\u00f3 de iogurt.<\/strong><br \/>\n<strong><em><span style=\"color: #808080;\">Autor\/a:\u00a0\u00a0\u00a0\u00a0<\/span><\/em><\/strong><strong> Juan Manuel Jim\u00e9nez Aguilar<\/strong><br \/>\n<strong><em><span style=\"color: #808080;\">Tutor\/a:\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/span><\/em><\/strong>Liliana Godoy Pombo<br \/>\n<strong><em><span style=\"color: #808080;\">Modalitat:\u00a0\u00a0<\/span><\/em><\/strong>Ci\u00e8ncies i tecnologia: Cientificot\u00e8cnic<br \/>\n<strong><em><span style=\"color: #808080;\">\u00c0rea:\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/span><\/em><\/strong>Bioqu\u00edmica<br \/>\n<strong><em><span style=\"color: #808080;\">Centre:\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/span><\/em><\/strong>Ins Torreforta<br \/>\n<strong><em><span style=\"color: #808080;\">Localitat:\u00a0\u00a0\u00a0<\/span><\/em><\/strong>Tarragona<\/p>\n<h6><strong>Objectius:<\/strong><\/h6>\n<ol>\n<li>Cercar y analitzar els diferents m\u00e8todes de recompte de microorganismes que s\u2019utilitzen actualment.<\/li>\n<li>Comparar aquests m\u00e8todes de recompte de microorganismes per comprovar que, aproximadament, tots donen un nombre aproximadament igual d\u2019organismes.<\/li>\n<li>Comprovar i quantificar l\u2019augment de microorganismes \u00e0cid-l\u00e0ctics durant el proc\u00e9s de fermentaci\u00f3 del iogurt.<\/li>\n<\/ol>\n<h6><strong>Hip\u00f2tesi:<\/strong><\/h6>\n<p style=\"text-align: justify;\">\u201cPotser, els diferents m\u00e8todes de recompte donaran un nombre similar de microorganismes si els apliquem a la producci\u00f3 del iogurt\u201d<\/p>\n<h6><strong>El proc\u00e9s:<\/strong><\/h6>\n<p style=\"text-align: justify;\">A la part te\u00f2rica del treball es van analitzar els m\u00e8todes de recompte de microorganismes i es va explicar la producci\u00f3 del iogurt.<br \/>\nPer altra banda, per a la part pr\u00e0ctica del treball, es va produir iogurt i es van recomptar el nombre de microorganismes que es trobaven cada 2 hores al proc\u00e9s de formaci\u00f3 de iogurt, posant aix\u00ed en pr\u00e0ctica 2 dels m\u00e8todes (recompte de viables en medi selectiu i recompte directe).<br \/>\nCom que vaig estar seleccionat al programa &#8220;Bojos per la ci\u00e8ncia&#8221;, aquesta part pr\u00e0ctica havia de ser realitzada a l&#8217;Universitat de Barcelona, per\u00f2 degut a problemes amb els medis de cultiu i a la falta de temps i d&#8217;inter\u00e8s, vaig haver de fer-la a l&#8217;institut, reduint aix\u00ed la quantitat de m\u00e8todes de recompte que estava previst fer.<\/p>\n<h6><strong>Conclusions:<\/strong><\/h6>\n<p style=\"text-align: justify;\">Una vegada vaig realitzar la part experimental no vaig poder validar o refutar la meva hip\u00f2tesi ja que nom\u00e9s vaig executat amb \u00e8xit un dels m\u00e8todes de recompte, el recompte amb cambra Neubauer, per tant, no vaig poder fer cap comparaci\u00f3 real.<br \/>\nFinalment, encara que les dades pr\u00e0ctiques obtingues van ser insuficients, basant-me en la part te\u00f2rica puc dir que totes les t\u00e8cniques hauran de donar un nombre d\u2019organismes aproximadament iguals, sent les m\u00e9s exactes per al recompte de microorganismes (tant viables com no viables) la citometria de flux, el recompte amb cambra Neubauer, el m\u00e8tode de Breed i la imped\u00e0ncia, mentre que a l\u2019espectrofotometria, si les concentracions d\u2019organismes s\u00f3n molt elevades, podem trobar-nos amb desviacions positives o negatives respecte a la concentraci\u00f3 que ens donaria aplicant la llei de Beer-Lambert. Per altra banda, per al recompte de viables, el recompte m\u00e9s prec\u00eds \u00e9s el recompte de viables en medi de cultiu MRS-Agar, mentre que el n\u00famero m\u00e9s probable ens d\u00f3na una aproximaci\u00f3.<\/p>\n<h6><strong>Bibliografia:<\/strong><\/h6>\n<ul>\n<li>James M.
