A m\u00e9s a m\u00e9s, s\u2019ha consultat a primeres fonts sobre la gastronomia molecular i la t\u00e8cnica d\u2019esferificaci\u00f3 en concret i s\u2019ha elaborat una entrevista a un cuiner d\u2019alta cuina que evidencia les difer\u00e8ncies entre cuina tradicional i cuina moderna.<br \/>\nUn cop s\u2019ha realitzat la investigaci\u00f3 s\u2019ha comprovat la necessitat d\u2019utilitzar l\u2019esferificaci\u00f3 inversa i s\u2019ha practicat la t\u00e8cnica. Finalment el treball cessa amb la possibilitat de creaci\u00f3 del men\u00fa a casa.<\/p>\n<h6><strong>Conclusions:<\/strong><\/h6>\n<p style=\"text-align: justify;\">Aquest treball conclou que hi ha una gran difer\u00e8ncia entre ambd\u00f3s camps gastron\u00f2mics deguda al temps invertit i l\u2019experi\u00e8ncia del cuiner i que com a conseq\u00fc\u00e8ncia d\u2019aquests, la cuina moderna \u00e9s m\u00e9s elevada econ\u00f2micament que la tradicional.
