A la nostra demarcaci\u00f3, enguany \u00e9s l&#8217;<a href=\"https:\/\/sites.google.com\/site\/inspalleja\/\" target=\"_blank\" rel=\"noopener\">INS de Pallej\u00e0<\/a> el centre on s&#8217;ha fet la confer\u00e8ncia del Dr. Claudi Mans sobre la taula peri\u00f2dica i els elements. El Dr. Claudi Mans l&#8217;ha emmarcada en la celebraci\u00f3, el 2019, de l&#8217;Any Internacional de la Taula Peri\u00f2dica.<\/p>\n<p><!--more--><\/p>\n<blockquote><p><b>Claudi Mans Teixid\u00f3\u00a0\u00a0<\/b>(Badalona, 1948), Catedr\u00e0tic em\u00e8rit del Departament d&#8217;Enginyeria Qu\u00edmica de la Universitat de Barcelona.<br \/>\nAntic deg\u00e0 de la Facultat de Qu\u00edmica, President de la Divisi\u00f3 de Ci\u00e8ncies, Director Acad\u00e8mic del centre de formaci\u00f3 continuada Les Heures (actualment IL3-UB), i exdelegat del rector per a la coordinaci\u00f3 del Campus de l&#8217;Alimentaci\u00f3 de Torribera-UB.<\/p>\n<p>T\u00e9 publicats llibres de text i de divulgaci\u00f3, entre ells &#8220;La truita cremada&#8221; (2005), &#8220;Els secrets de les etiquetes&#8221; (2007), &#8220;La vaca esf\u00e8rica&#8221; (2008), &#8220;Sferificaciones y macarrones&#8221; (2010) i &#8220;La Qu\u00edmica de cada dia&#8221; (2016), m\u00e9s de 150 articles cient\u00edfics i de divulgaci\u00f3, i m\u00e9s de 350 confer\u00e8ncies i comunicacions a congressos. Molts aliments s\u00f3n subst\u00e0ncies complexes, que la qu\u00edmica ens ajuda a analitzar. Tamb\u00e9 la ci\u00e8ncia qu\u00edmica ens ajuda a\u00a0 comprendre amb detall els fen\u00f2mens que tenen lloc durant la cocci\u00f3 i la preparaci\u00f3 dels plats. Es fan diversos experiments reals o en videoclip molt simples i visuals que relacionen ci\u00e8ncia i la cuina quotidiana.. Alguns d&#8217;aquests experiments serveixen per comprendre la coagulaci\u00f3 de les prote\u00efnes quan es fan truites, ous ferrats i altres preparacions. Altres mostren les reaccions de Maillard que tenen lloc quan es cuina carn o es fa pa o pastissos.\u00a0 I tot aix\u00f2 es fa d&#8217;una manera divertida i comprensible adaptada al nivell del p\u00fablic assistent.<\/p>\n<p>L&#8217;alumnat de 1r i 2n de Batxillerat de l&#8217;Institut de Pallej\u00e0, per preparar la confer\u00e8ncia, ha llegit el llibre\u00a0<a href=\"https:\/\/www.cossetania.com\/100-preguntes-de-qumica-quotidiana-2099\" target=\"_blank\" rel=\"noopener\"><strong>100 preguntes de qu\u00edmica quotidiana<\/strong><\/a> publicat per l&#8217;editorial Cosset\u00e0nia, del qual \u00e9s autor el mateix conferenciant.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Avui s&#8217;ha celebrat el cicle de confer\u00e8ncies &#8220;La ci\u00e8ncia en primera persona&#8221; en el marc de la &#8220;Setmana de la ci\u00e8ncia&#8221; .
